Healthy Egg Muffins
½ lbs lean ground beef
½ chopped green or yellow pepper
¼ chopped onion
2 cups of chopped mushrooms
¼ lbs of spinach
tbsp. coconut or olive oil
salt and pepper
Medium size 12-muffin baking tray
In a pan, add olive/coconut oil and sauté chopped peppers, onion and mushrooms until soft. Add ground beef and cook until done. Add spinach and cook for 2-3 more minutes and add salt and pepper to taste.
In a separate bowl, beat eggs with salt and pepper.
Preheat oven to 350°. Spray muffin tray with baking tray. Add one full spoonful of beef/vegetable mixture to bottom of each muffin cup. Pour ¼ cup of egg mixture over each.
Bake for 20-25 mins.
Yields 12 muffins.
