Why to Massage Your Kale (and other kale tips)

We all know kale is great for us, but it can get a bad rap sometimes. However, when it’s made correctly, kale truly is delicious. There are two main tricks to make sure your kale is as great as it can be:

  1. Get rid of the stems: this part is key to start with. The stems are tough and fibrous which creates a texture that can be off putting when eating. The easiest way to do this is to slice them out with a knife, or by running your fingers along the stem to rip the leaves off.
  2. Massage your kale: this might sound odd, but massaging kale is the best way to soften up your kale, add more flavor, and make it more enjoyable to eat. Softer kale is easier to digest and more tender in your mouth. To do this, coat the kale in a little olive oil or lemon juice and sea salt and then use your hands to squeeze the kale until it becomes tender but not mushy and takes on a bit of a glossy color (about 2-3 minutes, depending on how much kale). Not only will your massaged kale be more tender and palatable, it will be pre-infused with flavor before the dressing is even added


Easy recipe for a massaged kale salad:

  • Take massaged kale, add chickpeas, roasted vegetable(s) of choice, and tahini mixed with lemon juice, a little sea salt, and thinned with water as your dressing.
